Our Story

Our Family

Our Pizzaioli Mano immigrated to the U.S. from Albania when he was 18-years-old with little money in his pocket and he spoke very little English. He worked two full time jobs to make ends meet, to learn English, and adjust to life in U.S. His first landing spot was in SF and he’s been calling Sacramento home for the last 12 years. He met his wife Stefanie when she was a driven college student paving her own route to success. She challenged him to follow his dreams and to never lose sight of his heritage. Mano, Stefanie and their two children are now paving their own path, bringing their entrepreneurial passion to Flour Dust Pizza Company.

FORMULATING FLOUR DUST

Our story starts with an old built-in bbq pit in our backyard. Instead of tearing it down, we decided to repurpose the space into a brick pizza oven. Having never built an oven, or even worked with brick in the past, this project was quite a challenge. Mano spent his spare time researching oven designs and fire proof materials until he had a solid plan in place. He recruited the help of his dad who brought some brick and mortar experience to the table and his grandpa who was a general contractor and provided us tips and tricks along the way. After many long weekends the oven was finally a success and so were the pizzas coming out of it. Mano and Stefanie started hosting pizza parties and seeing the fun guests were having in this relaxed and low-key atmosphere. That’s when they realized they could bring their own oven and pizzas wherever the party is. Mano was raised in a family business atmosphere and always wanted to own his own business. Mano and Stefanie quickly realized that mobile wood-fired catering was finally the opportunity they’d been waiting for.

THE HARVESTER

Our 1952 International Harvester has its own story to tell. It got its start in the food industry, as a food delivery truck. It was most well-known for its delivery runs to San Quentin prison. Following its days at the prison, the truck continued its working ways. It was bought and restored by a plumber in the Bay Area who owned his own business. Following its stint in plumbing, the International became the staple for a local nursery. The truck was being used for hauling plants and flowers. Today, we’ve fully restored and customized this seasoned automobile and turned it into Flour Dust Pizza Company.

BASILICO PIZZA ACADEMY

Mano recently attended Basilico Pizza Academy in Florence, Italy where he trained next to Massimiliano Crocetti and his staff. Massimiliano is an amazing Pizzaioli with over 25 years of experience. The training took place at ZeroZero Pizzeria and the experience there was amazing. Mano described it as, “Being handed the keys to a Ferrari when you are just learning how to drive.” Basilico Pizza Academy was a lot like driving a fast car. This was a completely hands on training from day one where Mano worked full dinner services and served large crowds every night. “It was an eye opening experience to see how much pride Italians take in their food and the attention to detail they put into it.” Mano plans to bring that same approach to Flour Dust Pizza. “Once the training was complete I came home ready to build my own version of a Ferrari.”

PIZZA, THE ITALIAN WAY

At Basilico Mano learned the keys to delivering a perfect pizza. He says, “attention to detail was key in making the perfect dough for every pizza I served.” Ensuring dough consistency means leaving no room for error. “Everything is precisely calculated and measured down to a science, we checked flour, water and finished dough temperature! The use of a high-quality Italian flour called 5 Stagioni and top notch tomato sauce is also very important as they are the foundation to a great pizza.
Flour Dusts goal is to work with as many locally grown products as possible, while still incorporating some of the same fine Italian ingredients used at the academy.
